Have you heard about Ker or keriya? It is a green color berry, edible plant fruit which we get in Rajasthan. Specially it is known for the pickle. But we can use ker, in many interesting ways in the cuisine of Rajasthan. In Rajasthan, Ker Pickle is very popular and deliciousthing to eat in meals in every household. It is so delicious pickle that if you once have it you will never gonna forget the taste of the achar(pickle). This is the seasonal fruit so we get this Ker in summer time - april to june.
The taste of the ker is little bitter so when we used to make curry or pickle firstly we have to soak them in Buttermilk for 4 to 5 days to reduce the bitterness and acrid taste.
So in My todays blog I am sharing a recipe of Ker Pickle. It is prepared in Mustard oil and spiced up with lots of aromatic spices. It smell so good that will make you hungry to taste it.
Lets start the recipe of Pickle-:
1.the ker will be small green color berry like structure shown in the pic below.
2.we have to cut the edges(small branch) of the ker by hand.
3.I am cutting the edge of the ker.
4.its done now. And after that it will look like this.
5.now in a clay pot pour buttermilk and soak this ker for 4 to 5 days.
6.cover it and keep side.
7.after 5 days it will be like this. Drain the ker in collander and throw the buttermilk.
8.wash it nicely for couple of times.
9.and drain it.
10.now take a cotton cloth in a plate.
11.further place the soaked ker in this cloth.
12.place all the ker in this and spread it.
13.now cover this plate of ker by cloth itself and dry out in the sun for 1 day till the water dies in the ker.
14.after one day, ker is dried up, now put salt.
15.put turmeric powder.
16.mix all well by hands.
17.now in a plate take nigella seeds ans fennel seeds.
18.take some fennel seeds in a grinder.
19.now churn it and make a coarse powder.
20.heat musatard oil in a kadhai and put some fennel seeds to see if it is hot.
21.then add fennel seeds and nigella seeds and off the flame. Because the oil is hot enough.
22.now add asofeodita and bay leaf.
23.further add ker and mix it.
24.now add red chili powder
25.add 2 tbspn salt.
26.add turmeric powder.
27.add coarse dry mango powder.
28.further add coarse fennel powder.
29.mix all the ingredients well. Add vinegar if you want to store for 8 to 9 months.
30.mix and mix well. Its ready to taste now. If needed then we can add more salt.
SERVE THIS DELICIOUS HEALTHY KER PICKLE WITH ANY DISH
Put this pickle in air tight Jar and can store upto 6 to 12 months.
Ker has the health benifits also. It has been used in Ayurveda Medicine. And pickles treat constipation and stomach alignment.
