Hello hivers and friends of vegan family π±π.
Its a pleasure to greet you today again as I bring to share with you an amazing and delicious coconut π₯₯ cookies πͺ made in a special chewy, flaky and with vodka flavor. Have you ever tried making cookies with some alcohol and most of all , chopped flaky coconut infused with creamy vegetable vegan milk and my favorite Smirnoff chocolate flavored Vodka. Its indeed a delightful recipe.
I have been craving coconut this season as I see it everywhere. Although am not conversant with how the coconut π΄ season works, but it appears that we are in its season in my region despite that coconut π₯₯ is a year - round nut which when not in season becomes so expensive.
As the weekend is almost here and wanting to treat family, I decided to make some cookies πͺ with some coconut laying around in the refrigerator and to make it so unique from other cookies recipe, I added some Smirnoff chocolate Vodka. You can imagine how this cookies with taste with a hot cup of coffee βοΈ or tea π΅.
My simple coconut cookies recipe is about to be your new favorite family and friends treat ! They are chewy cookies with lots of chopped coconut π₯₯ for texture , plus some aroma and flavor from the added Vodka . They are really simple and quick to make.
Let me take you through the process with step by step.
INGREDIENTS:
250 g of all purpose flour 1/4 of large fresh coconut 1 large sachet of non dairy creamer 4 tablespoons of premium sugar 15 ml of Smirnoff Chocolate Vodka 20 ml of vegetable oil 1/2 teaspoon of baking powder 1/4 salt to taste
EXTRA INGREDIENTS:
1/2 glass of spring water
STEPS FOR PREPARATION:
Step 1.
Since coconut being the main base of this ecookies, we will creak it out from the shell, wash , slash into pieces before cutting them into tiny flakes .

Step 2.
Once the coconut are finely chopped, we pour it into a bowl , add the creamer milk

Step 3.
We measure out and add the Smirnoff Chocolate Vodka here above.
Add our water here , stir properly to incorporate
And allow for few minutes to infuse together .
Step 4.
Next we will add the flour and all dry ingredients in a bowl. The baking powder, sugar and salt.

And we stir to incorporate evenly.
Step 5.
To stir into a texture batter, we add the coconut, creamer, vodka infused mix here above
Stir gradually into a slightly texture batter
And for a fine soft batter we add the vegetable oil and finely make ready.
Step 6.
We gradually cut the texture batter, round it and place them on a glazed pan for baking. Topped with more thinly chopped coconut.
Step 7.
Take to the oven and bake for 30 minutes to obtain a brown like color cookies πͺ the way I love it.
While I love to have added and made this cookies with vodka for a unique aroma and flavor, you can decide to just make it in plain coconut π₯₯ flavors, thinly chopped or shredded. The most is to bring out enough coconut flavors to boost the deliciousness this cookies needs.
