Happy Easter 🐣 holidays hivers and vegan 🌱 friends 🥰💕

This homemade carrot 🥕 tomato 🍅 soup recipe is the ultimate comfort food I made today away from other Easter foods to enjoy the holiday while resting. Its a food on its own because its so soothing and filling, one we can enjoy as healthy boost.

Soups like this are always loaded with flavors from its fresh vegetables , the carrots , tomatoes and onions so delicious, as soup season is here with the rains ☔️. But you can make this soup just for a treat not minding any weather in season and enjoying it year round.

This version I made is very simple, easy and quick. However we can make this recipe in a larger batch to treat the family or last us the whole week by freezing . Trust me you will love this soup 🍲 and will want to make it in larger batch because this vegan 🌱 carrots🥕tomatoes 🍅 soup is So satisfying So good 😊.

INGREDIENTS:

3 medium fresh carrots
2 large reddish tomatoes
1 large onion
1/2 thumb of fresh ginger
1 large hot fresh pepper
1/2 teaspoon of curry
1/2 teaspoon of thyme herb 🌿
1/4 teaspoon of salt
1 tablespoon of vegetable oil

EXTRA INGREDIENT:
11/2 glass of spring

STEPS FOR PREPARATION:

Step 1.

I will start by cleaning, wash and slash cut the carrots.

Then chop cut it here above keeping readily

Step 2.

Here will wash and cut slice the tomatoes, onions and hot pepper.

Readily here above.

Step 3.

Next is to dice and crush the garlic 🧄

.Having all ingredients ready here.

Step 4.

To prepare the soup 🍲, I will set the pan on the cooker adding water. Once it boils, I will add the chopped carrot.

And cover to tender.

Step 5.

Next add the chopped tomatoes 🍅, onions , and hot pepper here, stir properly to incorporate.

Allow to cook for just few minutes here.

Then add the other spices. Ginger, curry, thyme and salt as above

Step 6.

Stir gently here to properly incorporate evenly.

Adding the vegetable oil and covering for just few seconds to finally come together.

Lower heat and set it down to serve.
