This weekend I was on a trip to Cumanacoa, a small town in the state of Sucre where they harvest a lot of vegetables and they gave me yucca as a gift, so today I have prepared this delicacy that is quick and easy to make and fits very well with a healthy lifestyle. It is a healthy yucca and sesame arepas. Yucca is rich in fiber and carbohydrates, it also provides vitamins and sesame has a high content of omega-3, calcium, antioxidants and fiber, which are perfect to incorporate into the diet of lovers of all things natural.
Este fin de semana estuve de viaje en Cumanacoa, un pueblito del estado Sucre donde cosechan muchas hortalizas y me regalaron yuca, así que hoy he preparado esta delicia que es fácil y rápida de hacer, además encaja muy bien con un estilo de vida saludable. Se trata de unas saludables arepas de yuca y ajonjolí. La yuca es rica en fibra y carbohidratos, además aporta vitaminas y el ajonjolí tiene un alto contenido de omega-3, calcio, antioxidantes y fibra, que son perfectos para incorporar a la dieta de los amantes de todo lo natural.
700 grams of yucca, 02 tablespoons of sesame seeds, 1/3 of corn flour, 1/2 cup of water, 01 tablespoon of salt.
700 grs de yuca, 02 cucharadas de ajonjolí, 1/3 de harina de maíz, 1/2 taza de agua, 01 cucharada de sal.
Lo primero que hay que hacer para preparar estas deliciosas arepas saludables es pelar y cortar la yuca en trozos, luego lavarla muy bien y ponerla a cocer con agua hirviendo, agregar sal y cocinar hasta que se ablande, colarla, ponerla en un bol y triturarla en caliente con la ayuda de un machacador o un tenedor para hacer un puré y dejar reposar. Antes de triturar, retirar las hebras.

Pasado el tiempo de reposada le añadimos la harina de maíz, el ajonjolí y el agua.
Then, with the help of your hands, knead very well until you obtain a very soft dough. Let it rest for twenty minutes. If the dough is too soft, add more corn flour, this will serve to give more consistency to the dough, and if it is hard, add more water.
Luego, con la ayuda de las manos, amasar muy bien hasta obtener una masa muy suave. Déjala reposar durante veinte minutos. Si la masa está demasiado blanda, añade más harina de maíz esto servirá para darle más consistencia a la masa , y si está dura, añade más agua.
Once rested, we take a portion of dough and make balls, followed by a circular movement pressing it until it is flattened and the arepa is formed. The thickness and size will be according to your preference. I like them small, so I got 06 arepas.
Una vez reposada, tomamos una porción de masa y hacemos bolas, seguidas de un movimiento circular presionándola hasta que se aplane y se forme la arepa. El grosor y tamaño será según tu preferencia. A mí me gustan pequeñas, así que me salieron 06 arepas.
In a previously greased and hot non-stick frying pan or griddle we cook the arepas, when they are browned on one side, we turn and cook on the other side, we will know they are ready when we give them a few slaps and they will sound. And that's it!
En una sartén o plancha antiadherente previamente engrasada y caliente cocinamos las arepas, cuando estén doradas por un lado, damos la vuelta y cocinamos por el otro lado, sabremos que están listas cuando les demos unos golpecitos y suenen. Y ¡listo!
These arepas are ideal for breakfast or dinner. We can enjoy them with eggplant cream, chickpeas, beans, avocado, salads, and with the filling of your choice. The best thing is that we will enjoy a healthy meal full of nutrients.
Estas arepas son ideales para el desayuno o la cena. Podemos degustarlas con crema de berenjena, garbanzos, frijoles, aguacate, ensaladas en fin, con el relleno de tu preferencia. Lo mejor es que disfrutaremos de una comida sana y llena de nutrientes.
