I continue to add barley to my diet, this superfood is satiating and powerful.

This time I prepared it in a salad. I love the texture it provides, it looks like little gummies.

A delicious pearl barley salad is an excellent option to start the day with energy or to serve it as a side dish at lunchtime.

Although, today I skipped lunch, doing one thing and another I was late, when I realized the time it was already past 3:00 PM. I didn't feel like making a very elaborate meal and since my barley had been soaking for a couple of hours I took the opportunity to cook it and make a salad, I ate the whole amount I prepared, although it wasn't much either, however, I am totally satisfied, I didn't feel like eating anything else and it's been a while and I don't think I will eat more today, this nutritious cereal is very satisfying.

Aunque, hoy me salté el almuerzo, haciendo una cosa y otra se me hizo tarde, cuando me di cuenta de la hora ya eran pasadas las 3:00 PM. No tenía ganas de hacer una comida muy elaborada y como ya mi cebada tenía un par de horas remojando aproveché de cocinarla y hacer una ensalada, me comí toda la cantidad que preparé, aunque no fue mucho tampoco, sin embargo, estoy totalmente satisfecha, quedé sin ganas de comer nada más y ya ha pasado rato y no creo que coma más por hoy, muy saciante este nutritivo cereal.

Ensalada de cebada perlada, una receta sencilla pero poderosa. ¿Me acompañas a la preparación?

Ingredients // Ingredientes:

1/4 cup pearl barley.
1 medium tomato.
1/4 piece of red bell pepper.
1/2 small avocado.
1 sprig of chives.
1 sprig of cilantro.

1/4 taza de cebada perlada.

1 tomate mediano.

1/4 de trozo de pimentón rojo.

1/2 aguacate pequeño.

1 ramita de cebollín.

1 ramita de cilantro.

For seasoning // Para aderezar:

2 tablespoons of oil.
1 dash of lemon juice.
Salt and black pepper to taste.

2 cucharadas de aceite.

1 chorrito de limón.

Sal y pimienta negra al gusto.

Preparation // Preparación:

To prepare the salad we must have our barley already cooked and for this you can do it directly after washing it or you can soak it before for a few hours. In my case I soaked them for about 2 hours or more, I threw away the water and cooked them in 2 and a half cups of new water, start cooking over high heat, when it starts to boil lower to minimum heat and cover, with 35 to 40 minutes is enough. When they are cooked, they triple their size.

Strain if there is water left over and this water is delicious if it is sweetened a little and consumed separately, so it is not wasted.

Once the barley is cooked and drained, cut the rest of the ingredients and mix them to form the salad. This time I cut them into small pieces.

Para preparar la ensalada debemos tener nuestra cebada ya cocida y para ello se puede hacer directamente luego de lavarla o se puede remojar antes durante algunas horas. En mi caso las remojé por unas 2 horas o más, boté el agua y las cociné en 2 tazas y media de agua nueva, se comienza a cocinar a fuego alto, cuando comienza a hervir se baja a fuego mínimo y se tapa, con 35 a 40 minutos es suficiente. Al estar cocida triplica su tamaño.

Se cuela si le sobra agua y esta agua es deliciosa si se endulza un poco y se consume aparte, así que no se desperdicia.

Ya con la cebada cocida y escurrida, se corta el resto de ingredientes y se mezclan para formar la ensalada. Esta vez los corté en trocitos pequeños.

I removed the skin from the tomato and dipped the bell pepper in a little vinegar before cutting it, along with the cilantro and chives.

Avocado is very expensive for these dates but I got one at a good price, very small but delicious, the skin came off very easily and it was very creamy.

With everything already chopped, the only thing left to do was to mix.

Al tomate le quité la piel y al pimentón lo sumergí en un poco de vinagre antes de cortarlo, junto con el cilantro y el cebollín.

El aguacate está muy costoso para estas fechas pero conseguí uno a buen precio, muy chiquito pero delicioso, la piel se le desprendió muy fácil y estaba muy cremoso.

Con todo ya picado, solo quedaba mezclar.
