Today I made a simple and quick vegan recipe Qurator's: Hive Top Chef Challenge, using an eggplant. I use this recipe a lot and it's the best when done in the oven. I ran out of baking paper so I fried them in a pan today and they were also great.
We had them for lunch today with some crunchy fresh kale and a homemade ketchup-like sauce.
Ingredients:
- 1 large eggplant
- 50 g of breadcrumbs
- 30 g of all-purpose flour
- 3 tablespoons of nutritional yeast
- 1 tablespoon of sesame seeds
- 1 teaspoon of red sweet paprika powder
- 80 ml of oat milk
- 1 tablespoon of all-purpose flour
- olive oil
- salt to taste
Preparation:
- Toast sesame seeds in a hot dry pan.
- In a bowl mix dry ingredients: breadcrumbs, all-purpose flour, nutritional yeast, sesame seeds and sweet red paprika powder.
- In a separate bowl mix oat milk with a tablespoon of all-purpose flour.
- Slice an eggplant and dive it in oat milk first then cover it with dry ingredients.
Lightly press it into the surface of eggplant slices. Leave it to sit for a few minutes on the counter.
- Cover the baking tray with baking paper and place eggplant slices on it. Spray them with olive oil, turn them around and spray on the other side as well.
- Place it in a preheated oven on 230°C or fry it in a pan with just a little bit of oil.
- Salt them to taste before serving. Serve it with some crunchy vegetables and a homemade sauce.
