So I decided to take up the cabbage recipe challenge from @qurator . While cabbage happens to be my least favourite I've found a way that makes it alot more palette friendly or at least edible in my case. Cabbage happens to be very good for you. Why? it’s low in calories, high in fiber, and packed with vitamins like C and K. It supports digestion, boosts your immune system, reduces inflammation, and may help protect against some diseases, including certain cancers. Often more nutritious raw because cooking can reduce some of its vitamin C and other heat-sensitive nutrients. Eating it raw in salads or slaws helps preserve these vitamins and the beneficial enzymes. However, lightly steaming or fermenting (like in sauerkraut) also keeps many benefits and can improve digestion.
I decided to go with a cabbage salad on the with my roast tikka chicken and chips just to balance flavours.
**Cabbage salad **
Ingredients:
- Cabbage
- Tomato
- Onion(grated)
- Cucumber
- Za'taar (Middle Eastern spice mix of dried herbs, sesame seeds, sumac, and salt.)
- Sumac (tangy, reddish-purple spice made from dried and ground sumac berries. )
- Brown vinegar or balsamic vinegar
- Pepper
- Lemon juice
Method :
- Chop up and slice your cabbage cucumber tomatoes and whatever else you like (nuts like pecans are also really good with this)
- Sprinkle the rest of the ingredients over or mix .
