Since few months ago, it was raining non-stopped in Asian countries. Due to the bad weather, many fishing boats stop approaching the deep sea areas. The poor catching made us always short of deep sea fresh fishes. For that reason, I found that we were not only difficult to get big fresh fishes in the local markets, but also the prices of fishes became very expensive, especially my favourite red snapper fishes. It was because most of the fishermen will supply all the good fishes to the local restaurants or for export purposes only.
For the first time after few months, finally I found many big red snapper fishes selling in local 'pasar', hooray!!! It costs me around RM25 per kilogram. I manage to buy a 4 kilogram of big red snapper.
Today, I would like to share my favourite red snapper fish recipe.
Ginger Onion Fish With Salted Black Beans

This is a famous recipe in Asian countries. The salted black beans sauce is a very good appetizer sauce, you may need several bowls of rice. My whole family like this recipe very much, It is a necessary to cook a little bit more rice than usual.
Ingredients
Red snapper fish slices ∼ 400g
Salted black beans ∼ 40g
Big onion ∼ 140g
Corn flour ∼ 1 table spoon
Thick soy sauce ∼ 2 table spoons
Ginger ∼ 20g
Sesame oil ∼ 1 teaspoon
Salt ∼ ½ teaspoon
Cooking oil ∼ 3 table spoons
Direction
In a bowl, marinate the fish slices with corn flour, salt and a little bit of water for 10 minutes.
Heat the cooking oil in a wok, add in the ginger and salted black beans. Stir fry for half minute. Add in the big onion and fish slices.
Fry the fish slices for 3 minutes.
Add in 50ml of water,sesame oil and thick soy sauce.
Stir fry for a while and ready to serve.
