I don't post recipes very often. I just eat faster than I shoot I guess :p
But I saved a piece of pie for you! Oh it was good too :)
Apple Meringue pie
Base:
400 g all purpose flour (I used whole grain)
100 g icing sugar (or less if you don’t want it too sweet)
3 egg yolks
120 g unsalted, cold butter
3 tablespoons of cream (I used Greek yogurt)
pinch of salt
Filling:
1 kg of apples
1 teaspoon of cinnamon
pinch of fresh ground nutmeg
1 tablespoon of potato starch
3 tablespoons of lemon juice
Meringue:
3 egg whites
1 glass of sugar (it was very sweet, next time I will use less)
Nikon D5500 + Sigma 105 (f/13, 1/20, 105mm, ISO1600)
First mix flour with salt and sugar. Add butter and mix to rather fine crumbs. Add egg yolks and cream (yogurt) and mix well to a smooth pastry, but do not over mix it.
Place the dough in a tart form (if you have the one with removable bottom it will be perfect!) and press evenly to the bottom and edges. Prick the bottom with a fork – it will help to keep shape, and leave it in the fridge for about 3 min.
Preheat oven to 180 degrees C and bake chilled bottom of our pie for about 20 min.
In the meantime peal apples, slice them thinly, add all the ingredients and mix well. Leave in the fridge until they are needed.
Now take the egg whites and beat them very well. Add sugar and beat again to very stiff peaks.
When the base is pre-baked (don’t let it go brown) take it our from the oven, add apples and meringue and bake for another 20-25 minutes until nice and golden-brown.
