Who doesn't love a good lobster dish? New Zealand’s Rock lobster with red curry sauce, mango sambal & grated coconut rice. What do you think? Does it sound like a quirky combination? I was challenged by my family and close friends to create a unique, star quality lobster recipe using some of the exotic spices from my homeland. Crayfish is one of the luxurious seafoods and that comes with a hefty prize tag of $100 per KG.
This recipe is ingeniously designed to mingle various elements such as tangy mango, sweet fresh coconut, chillies, curry leaves and aromatic flavours. Making sure that the hero of the dish shines through and the flavours are subtle, delicate yet have a bit of personality.
Spiny rock lobsters (crayfish) are one of our most delicious delicacies found throughout New Zealand and Chatham Islands' coastal waters. The meat quality flesh is firm yet very succulent and has a sweet, juicy rich taste and retains its shape in most styles of cooking.
