This potato or potato omelette is prepared in the oven and has potatoes, eggs, onion, ham, garlic, and jalapeños (or green peppers). In a large saucepan or pan, heat olive oil over medium heat. Add the potato or potato slices and stir until all the slices are coated with oil.
