this is pretty useful especially if you want to build out your own custom iso's maybe for distribution to other people -- for instance the example they use is the GNU Radio Live SDR Environment but it could be for a very specific slimmed down installation or ready to go installation with images, movies, and content to send to people via USB stick for installation.
Ubuntu Remaster is a set of automated scripts for taking a stock ISO distribution image from Canonical and recreating it with changes and additional content. It is broken up into layered branches to allow you to make your own optionally encrypted ISO images. Customizers can branch off various 'layers' to add their custom content to an existing image.
you could use this with my recent post with the etcher pro i mentioned yesterday to send encrypted installers to your friends and connections too.
