Its time for another round of @progressivechef’s Steemit Iron Chef Challenge. Round 12 of the 2nd Act. Many thanks to @progressivechef for hosting this challenge! So many amazing creations each week.
This week our challenge is…
Pasta!
When my daughter was married 5 years ago we hosted a bridal luncheon for her. Since she is gluten intolerant I was very careful to prepare only gluten free options for lunch. Today I would like to share a pasta creation which was loved by all!
Chilled Sesame Soba in Cucumber Cups
This pasta dish can be served as an appetizer or as a salad. It is light, crispy with an Asian flair!
Ingredients
- Soba Noodles
- Cucumbers
- Sesame Oil
- Rice Vinegar
- Tahini Sauce
- Green Onions (chopped very thin)
- Pepper
I first peeled the cumber and sliced in 1 ½” slices.

Then, cook the Soba Noodles until tender.

Whisk the Sesame Oil, Rice Vinegar, Tahini Sauce together and pour half over the soba noodles. Toss half of the chopped green onions. Twirl noodles into cucumber cups. Garnish with remaining green onions and chill until ready to serve! Drizzle additional sauce over noodles before serving!
