Perfect Beach Food
I love it! We live near the beach and visit often. Taking a day at the beach really revs up the appetite but the thought of a greasy, heavy lunch doesn’t sound too appealing. Mr. Bird likes a serious sandwich so I thought I would put together something which would satisfy the bird appetite! The beach can be hot, so refreshing is a necessity!
Falafel Beach Pita with Refreshing Cucumber Yorgurt
I chose a pita because who likes to have their sandwich full of sand right?
No problem with a pita pocket!
Ingredients
Pita
- Bread flour
- Maple Syrup
- Yeast
- Olive Oil
Falafel
- Dry Chickpeas (soaked overnight and drained)
- White Onion (chopped)
- Fresh Cilantro
- Fresh Dill
- Fresh Lemon Juice
- Fresh Garlic Cloves
- Cumin
- Baking Soda
- Flax Seed
- Red Pepper
- Sea Salt
- Sriracha Sauce
- Fresh Tomato (sliced)
- Red Onion (sliced)
- Fresh Spinach (sliced)
- Cucumber (sliced)
Cucumber Yogurt
- Cucumber (grated)
- Garlic Cloves
- Plain Greek Yogurt
- Red Wine Vinegar
- Sea Salt/Pepper
Prep the pita bread and let cover and let dough rest in 8 balls for 20 minutes. Roll dough to ¼” thickness and bake 4 minutes! Keep an eye on these as they bake quickly!

Now lets make those falafels! Combine the chickpeas, onion and all spices in your favorite food processor. Process until coarsely chopped. Shape into ½” patties. Fry patties in for about 2 minutes each side then pop them in the oven at 450 degrees for 12 minutes.

I prepared the Cucumber Yogurt sauce while the falafels were baking. Combine garlic cloves with Olive oil and blend until smooth. Mix all ingredients and chill until you are ready to assemble. I often make this ahead of time, it is a wonderful sauce for many summer sandwiches!
Assemble your pita sandwiches ahead of time! Put them in your cooler, I add the cucumber sauce when you are ready to eat! Add your favorite fruit kebabs to the cooler.

What a great beach beach lunch!
