Rice, lentils and mushroom croquettes with peanut coconut curry sauce.
I used basmati again since that's all that I had, and the time I had to prepare everything was the time it would take for the lady of the house, whose kitchen it is, to go to Costco with her husband. There is always tension if I cook while she's here. So I searched for ingredients that were already in the house and came up with something quickly.
The rice mixture was boiled with lentils then mixed with chopped mushrooms and fresh minced garlic, salt, pepper, lime juice, and green onions. I added a bit of bread crumbs and formed croquettes coating them with a mixture of cornmeal and breadcrumbs, after dipping them in flax egg which is ground flax soaked in hot water. I don't use eggs or animal products
They were browned in a pan then put in the oven on 400 f.
The peanut coconut curry sauce was blended with peanut butter, sesame oil, soy sauce, lime juice, rice wine vinegar, sugar, hot peppers, garlic, ginger, coconut milk, cumin, coriander and turmeric.
