This weeks #steemit-ironchef theme is Spinach. Spinach is not not a regular ingredient I buy due to the fact it's high in oxalate acid which inhibits the absorption of calcuim. Calcium is very important for the bones and can be found in a wide variety of plant based foods, and I don't want anything to prevent me getting calcium into my body. This is why a lot of vegans like myself choose kale over spinach. However if you eat spinach with vitamin C ingredients like lemon juice and tomatoes, it will reduce the effects of oxalate acid.
One property I love about spinach is that its great at colouring things green and can easily be blended smoothly, this is what gave me the idea to make a green pizza base and the rest was history. I don't get to eat pizza much as I don't have an oven, I'm saving up to by a dehydrator right now but in the mean time I had to cheat this one and fry the pizza base like a pan cake but you can bake the mix in your oven instead which will give the base a more authentic crispier effect.
Instead of the traditional mozzarella cheese you get on pizza I made a vegan cheesy spinach pesto and spread it over the base, then you can top the pizza with whatever veggies you like, I used a mixture of fresh veggies and some lightly sauteed mushrooms and intend to eat the pizza now fresh. If you prefer you could add any veggies you like and bake them in the oven after your pizza base has cooked a bit. Finally the pizza is topped with basil, chopped spinach and nuts
Spinach pesto
sesame seed
sauteed mushrooms
lemon juice
apple cider vinegar
nutritional yeast (for touch of cheesy flavour)
Himalaya salt
oregano
spinach
(blended until smooth)
Mix in finely chopped spinach
Pizza base
soak red lentil for 30mins
blend lentil and some extra water
add chopped spinach until desired greeness
Then spread on parchment paper and bake in the oven
or fry in a pan like a pancake
Finally add all the desire toppings
