BIGOS - Typical Polish Stew - The Sandwich Version
Themed Week: Anything to do with Steem Fest 3 in Poland. Thanks @jaybird for this not to easy challenge. Okay, so I'm sure everybody at the Steem Fest in Krakow will eat at least once a day (No rules without exceptions).
That way we have all the polish traditional kitchen as idea giver and luckily my mom is born in WrocΕaw and grandma was cooking us always lots of polish specialities. I pick my favourite which is called BIGOS (or Hunter's Stew in English) and turn it into a sandwich... πππ

What You Need Is 3 Hours Of Your Time And Some Of This:
Grandma Margaretha's "Bigos"
- Cabbage & Sauerkraut
Cut cabbage in small pieces then crush it with sea salt and your bare hands... mix with the sauerkraut and cook for about one hour!
- Mushrooms, Onions & Garlic, Smoked Sausage, Pork Blade Shoulder
SautΓ© the meat in pork fat, then ad onions, garlic and the mushrooms (here I took some boletus and chanterelle I found in the woods on wednesday)
When the two sauce pans are ready, mix all together and ad
- Bay Leaf, Caraway Seeds & Juniper Berries
- Optional: Salt & Pepper
Let the whole delice simmer for about one hour and then let it rest for another one... at least!

- Pumpernickel
This is a typical german bread and today my first choice for this sandwich version... it will perfectly complete this hearty meal.
Actually I had to go with a slightly different version of this bread, 'cause here in brittany I couldn't find the original. It's still 100 procent organic rye... but not as black as the Pumpernickel.

- Home Made Cucumber Pickles
- Salad
