I have embarked on a side project to cook up some healthy meals and store them in the freezer in preparation for the upcoming busy months at my household.
My research indicated that meatloaf is a freezer friendly dish and so I decided to test out a few meatloaf recipes. However, I didn't find the 'one' until the other day.
So, I took advantage of this past Easter Long Weekend and made tons of meatloaf to put away. In addition, I also made a delicious Meatloaf Sandwich topped with Onion Mushroom Kale Gravy for my 2nd sandwich of the week.
This meatloaf recipe called for three different kinds of ground meats (ground beef, pork and chicken). I found this meatloaf extra flavourful because of the mixed meats. The Onion Mushroom Kale Gravy also went very well with the meatloaf.
Here are the ingredients:
For the meatloaf - ground beef, ground pork, ground chicken, onion, garlic, celery, milk, bread, parsley, mustard, home-made tomato sauce (I mixed mustard with homemade tomato sauce as topping for one meatloaf and it was quite tasty)
For the gravy - butter, onion, mushroom, kale, corn starch, stock
For the sandwich - 12 grain bread
