On my trip to the local market earlier this week, I saw some portobello mushrooms and they were so fresh looking. Although I had no idea what I was going to do with them, I bought some anyway.
Since my husband is having issue with gluten, I have to be more creative when it comes to meal prepping. Today, while I was organizing my fridge, an idea came to mind and I thought, perhaps, I could make a sandwich using portobello mushrooms.
Portobello mushrooms are thick and meaty, just like a steak. I truly believe that they have a texture and flavour that fit in nicely with sandwiches. In the past, I had use these burger sized mushrooms as replacement for meat. But today, I decided to switch things up and use them as replacement for bread. Here was what I came up with:
I was quite happy with the outcome as it was a meal my husband could enjoy without any worries - that puts a smile on my face!
