So we finally got some onions locally and got around to fermenting them. We all know that onions are so healthy, but we made them even more healthy and tasty. Check this out.
First get onions.
Peel them and chop in half. Or keep whole.
Then slice by hand or processor. I was so crying by now. I had to stop about every 3 mins for a beer.
Place them in sterile jars. We added pepper corns, mustard seeds, bay leaves, all spice and poured salt brine over the top. Again 2-3% salt in brine.
Safety glasses were so used. Still cried like a baby. We only used about 6 onions and got heaps of jars. Used some brine from fermented chillies as a starter for some of the jars. Should be interesting.
