Hey friends, all this cold weather in London has given me a proper hankering for a nice curry!
I haven't actually made a curry from scratch since I was a meat eater, so I was definitely excited to try my hand at making a vegan one ๐
My favourite curries have a lot of coconut in them, but still a fragrant mix of flavours and a little kick of spice!
The one I rustled up was just that, and certainly confirmed to me that you don't need meat or dairy to have a delicious and satisfying curry.
Ingredients:
- 1 medium potato, cut into bite-sized pieces
- 1 medium sweet potato, cut into bite-sized pieces
- 3 cups mixed chopped vegetables (I used cauliflower and garden peas)
- 1 tbsp coconut oil
- 1 large onion, finely chopped
- 2 inch piece of ginger, peeled and chopped
- 4 garlic cloves, crushed
- 1 x 400ml can of coconut milk
- 1/4 cup cashews
- Squeeze of lemon
- Two small green chillis, deseeded and chopped
- 4 Tbsp tomato paste
- 1 tbsp each: curry powder and garam masala
- 1 tsp each: cumin, ground coriander, turmeric
- 4 tbsp vegan yoghurt
- 1/2 cup desiccated coconut
- 1 tbsp brown sugar
- Salt and pepper
- Top with any or all: cashews and sultanas
Method:
- Add the potato and sweet potato chunks to a medium-sized pot, cover with water and bring to a boil.
- Boil for 5 minutes then add the rest of the veggies to the pot.
- Continue to boil for another 5 minutes then drain the pot and set to one side.
- While the vegetables are cooking, heat the oil in a large pan over medium heat. Add the onion, stirring occasionally, until browned.
- Add the ginger and garlic and cook for 2 minutes.
- Remove the pot from the heat and add the chillis and all of the spices.
- โMix well and add the tomato paste.
- Return to the heat and add the coconut milk, cashews and lemon juice, stirring well.
- Then add the vegan yoghurt and sugar and blend well.
- Add the vegetables and desiccated coconut.
- Garnish with sultanas, cashews and coconut.
- Serve with rice, vegan poppadoms and samosas.
I was so happy with my first vegan curry! There are a lot of ingredients for sure, but the method itself is pretty simple. I'll definitely be making this again ๐
