Smothered Kingfish
When an unsuspecting kingfish gets caught up in our friend Captain Glen's shark net, guess what we're having for dinner.
In many countries eating the fish whole is the way to do it. However, as you might have known, Sheila doesn't even want to know that her fish ever had a head much less eat it whole. So sorry, Mr. Kingfish it's the fillet knife for you. Plus, the fact that Sheila saw the head, the only way that she'll eat it is if it smothered, hidden away under other goodies.

The fish is in there somewhere!
Smothered in tomatoes, black olives, lemon slices, Italian parsley, and wine. Baked at 400 F for 20 minutes.
Served up with a dollop of mascarpone and a side of basmati rice. Even Sheila loved it!
