When I first read what's for dessert, the first thing that came to mind was 'It's breakfast... but not as we know it! Lemon curd, tea and buttered toast? Sounds like breakfast to me!' However, this dessert was executed perfectly. Let me explain. You had the biscuit crumb that was underneath a lovely slab of lemon curd. This was set yet creamy and it had a burst of lemon zing! Very zesty and I love that. It also had a caramelised top that was so thin and it had the greatest 'snap' sound as it delicately cracked. The sweetness worked really well with the curd. The lime and tea meringues were little kisses of delight and the buttered toast ice cream. My God!! The buttered toast ice cream!! I could have eaten a tub of it. It was so smooth, so silky, so creamy and it had that flavour just as you would with a piece of buttered toast for breakfast. I'm not much of an ice cream fan, but this... I could eat all day long. Very very good! The whole dish was a delight and I would 100% pick this if it was on the menu again.
