I hope you are well or are trying to be well. I'm fine. Lately my family and I have been trying to do some experimental things. There's a few things we've been doing lately and I want to talk about one of them right now, and that's Lutenitsa, which is a breakfast sauce.
Since it is an experiment, we prepared only one jar. I will add the ingredients for this right below. It may be good to just say in advance that this is a very dirty job. Normally you don't get so dirty in the garden, in the field or outside in the wood fire, but in a small kitchen it gets very dirty. It's worth it though.
Ingredients
3 large-medium aubergines
5 medium-sized tomatoes
3 large capia peppers
3 large capsicum peppers
3 cloves of garlic
salt, black pepper, chilli flakes, red chilli powder, cumin (1 teaspoon each)
2 teaspoons sugar
1 tablespoon apple cider vinegar
250 g walnut kernels
The ingredients are easily available in almost every home. It is certain that it is more innocent than French fries both in terms of nutritional values and calories, and I prefer it as one of the reasons, not only for this reason.
Preparation
Unfortunately, there's nothing easy about our job. At least as far as I know. The thing to do is to try to peel the vegetables after grilling them. In the meantime, because my mum was going to make something else called Ikra at the same time, the ingredients were so much. The ingredients of Ikra are the same, only the preparation is different, and to tell you the truth, I don't like aubergine so dense.
Tomatoes are grated instead of grilled. Of course, you can also pass it through a food processor if you want. I am sure it will be easier. These processes take a lot of time. Although we made a little, it took us 2-3 hours.
Now that the hardest step is over, all we have to do is rejoice 😂 After doing a victory dance for this, I started to work on the rest. By sending my mother to the room. Because from now on, 2 hands were enough, not 4 hands.
What we will do is to fry the garlic in a pan with a little olive oil. You can grate the garlic if you want, but I thought it was too watery and lost its flavour, so I chopped it into small pieces as much as I could.
Then I took the tomatoes, aubergines and peppers and added my spices, vinegar and sugar. The walnuts will be added last, after they cool down.
After boiling this mixture on low heat for a while, about 40 minutes, I let it cool down. After adding the walnuts, it was ready. I think it is better to eat it after waiting at least one night in the fridge. It is possible to say that the flavour is more delicious.
You can also prepare Lutenitsa for the winter. It has a delicious and long-lasting structure. It can also be a comfort and saviour in winter. We are planning to make it this year.
As you can see, although it is simple to make, it is a very laborious job, but I think it is worth it. After roasting the vegetables, it is a simple job that can be done while watching something in front of the television.
Today, I will also try to apply the tea brewing techniques I have learnt thanks to the course programmes of the Istanbul Metropolitan Municipality. I hope I can share them as well. Malzemeler
3 büyük-orta boy patlıcan
5 orta boy domates
3 büyük boy kapya biber
3 büyük boy çarliston biber
3 diş sarımsak
tuz, karabiber, pul biber, toz kırmızı biber, kimyon (1'er tatlı kaşığı)
2 çay kaşığı şeker
1 yemek kaşığı elma sirkesi
250 gr ceviz içi
Malzemeler neredeyse her evde kolaylıkla bulunabilenlerden. Hem besin değerleri açısından hem de kalori açısında patates kızartmasına göre daha masum olduğu kesin bir şey ve sadece bu yüzden olmasa da sebeplerinden biri olarak tercihimdir.
Hazırlık
İşimizin ne yazık ki kolay bir yanı yok. Yani en azından benim bildiğim kadarıyla. Yapılacak şey ise sebzeleri közledikten sonra kabuklarını soymaya çalışmak. Bu sırada annem aynı zamanda İkra isimli başka bir şey yapacağı için malzemeler bu kadar fazlaydı. İkra'nın da malzemeleri aynı sadece yapımı farklı ki ne yalan söyleyeyim patlıcanı bu kadar yoğun bir şey sevmiyorum ben.
Domatesler ise közlenmek yerine rendeleniyor. Tabii isterseniz rondodan da geçirebilirsiniz. Eminim daha kolay olacaktır. Bu işlemler bayağı bir zamanınızı alıyor. Biz az yapmamıza rağmen 2-3 saatimizi aldı.
Asıl zor adım bittiği için artık tek yapacağımız şey buna sevinmek 😂 Bunun için bir zafer dansı yaptıktan sonra kalan kısım için işe koyuldum. Annemi odaya göndererek. Artık bundan sonra 4 el değil de 2 el yeterliydi çünkü.
Yapacağımız şey ise bir tavada sarımsağı biraz zeytinyağı ile kavurmak. Sarımsağı isterseniz rendeleyebilirsiniz de ama çok sulanıp da tadını kaybettiğini düşündüğüm için elimden geldiğince küçük parçalara ayırdım, kıydım.
Sonrasında ise domates, patlıcan ve biberleri aldığım tencereye baharatlarımı, sirkemi ve şekerimi de ekledim. Ceviz ise soğuduktan sonra, en son eklenecek.
Bir süre ki yaklaşık 40 dakika, bu karışımı kısık ateşte kaynattıktan sonra soğumaya bıraktım. Cevizleri de ekledikten sonra hazırdı. Bence dolapta en az bir gece bekledikten sonra tüketilmesi daha iyi. Tadının daha lezzetli olduğunu söylemek mümkün.
Ayrıca Lutenitsa'yı kışlık olarak da hazırlayabilirsiniz. Lezzetli ve uzun süre dayanabilen bir yapısı var. Kışın rahatlık ve kurtarıcı da olabilir. Bu sene yapmayı düşünüyoruz.
Görüdğünüz gibi yapımı basit olsa da oldukça zahmetli bir iş ama bence değer. Sebzeleri közledikten sonra televizyon başında bir şeyler izlerken de yapılabilecek bir iş olduğu için basit.
