Had some sambal with hard boiled eggs yesterday with rice for dinner yesterday.
Used leftover sambal from a few days ago that came together with the Nasi Lemak. Nowadays we always ask them to seperate the sambal for us and not packed together with the rice. They always give way more than enough when it's packed seperately so we'll keep the unused amount and save it for a dish like this hard boiled egg one.
First start by hard boiling your eggs then peel off the egg shell and set aside. In the meantime, we heated up the sambal in a wok and added some tomato ketchup, some fried garlic and also some fried shallots. This is to add a little more flavor to the already delicious sambal that's packed with sweet onions.
Add the hardboiled eggs to the wok and let it stew with the sambal for 5-10 minutes. Turn off the fire and its ready to serve.
Eat this with white rice or bread/roti, and enjoy. Superb way of using leftover sambal, making something delicious and easy to cook.
