I love the cookie base that is usually put at the base of the tartlets. They are usually cookies that are crumbly and very soft when you eat them. I always like to experiment to get the best texture in this cookie base, but lately I've been loving using the Basque pie dough. It is a soft dough, with an earthy texture that melts in your mouth. This dough has become my perfect base for preparing desserts or salty cakes.

Siempre me gusta experimentar para lograr la mejor textura en esta base de galletas, pero últimamente me ha encanto usar la masa del pastel vasco. Es una masa suave, con una textura terrosa y que se deshace en tu boca. Esta masa se ha convertido en mi base perfecta para preparar postres o pasteles salados.

I had some fresh figs available at home and decided to make a fig tart. While I was preparing the cookie base, I looked at a cupcake mold and it occurred to me to place the dough in the mold and add a fig in the center. Baking tartlets with fresh fruit is one of the best things we can do. The fruit releases all its juices and these are absorbed by the dough, giving flavor to the cookie.

Tenia algunos higos disponibles en casa y antes de que se dañaran, pensé en hacer una tarta de higos. Mientras estaba preparando la base de la galleta, mire un molde de cupcake y se me ocurrió colocar la masa en el molde y agregar un higo en el centro. Hornear tartaletas con fruta fresca es una de las mejores cosas que podemos hacer. La fruta suelta todos sus jugos y estos son absorbidos por la masa, dando sabor a la galleta.

They looked like cupcakes but made of cookie and with a fig that stands out, soft and that has impregnated the cookie in its juices. Sin pensarlo dos veces, decidí continuar con ese plan y el resultado fue magnifico. Parecían unos cupcake pero de galleta y con un higo que sobresale, suave y que ha impregnado la galleta en sus jugos. Para mi el resultado fue perfecto y hoy quiero compartir esa receta contigo. • The first thing to do is to prepare our cookie dough. In a bowl, we add the wheat flour, sugar and butter. We mix with our hands until it has the texture of breadcrumbs or wet sand. If the butter is cold, you will get a better result.

• Lo primero que debemos hacer es preparar nuestra masa de galletas. En un bol, agregamos la harina de trigo, el azúcar y la mantequilla. Mezclamos con nuestras manos hasta que tenga textura de migas de pan o arena de mojada. Si la mantequilla esta fría, obtendrás mejor resultado.

• Add the 2 eggs and integrate them into the dough without working hard. We only want to integrate the eggs and not knead so that the gluten in the mixture does not develop. Let stand in the refrigerator for 30 minutes.

• Agregamos los 2 huevos e integramos a la masa sin trabajar con fuerza. Solo queremos integrar los huevos y no amasar para que no se desarrolle el gluten de la mezcla. Dejar reposar en la nevera por 30 minutos.

• Once the figs are well washed, cut off the tip and make a cross cut.

• Una vez los higos bien lavados, cortamos la punta y le hacemos un corte en cruz.

• In a cupcake mold, add a portion of the dough and distribute it well over the entire surface. Place a fig in the center.

• En un molde de cupcake, agregamos una porción de la masa y la distribuimos bien por toda la superficie. Colocamos un higo en todo el centro.

• Add sugar mixed with cinnamon in the cross cut of the fig.

Agrega en el corte en cruz del higo, azucar mezclada con canela

• Bake in a preheated oven at 180°C for 20-30 minutes. When the cookie is well browned around the edges, it is ready to be removed from the oven.
• Let cool a little and enjoy with a nice cup of tea.

• Llevamos a horno, precalentado a 180°C, por el espacio de 20-30min. Cuando la galleta este bien dorada por los bordes, ya están listo para retirar del horno.
• Deja enfriar un poco y a disfrutar con una buena taza de té.
