
Breakfast is the most important meal of the day.
I think that couldn't be far from the truth. If you have healthy and hearty breakfast, it definitely sets up the tone of your day. But since some of us don't have that much time, we often choose something quick and simple. Our choice often includes sugar packed that could only last a few hours and makes us hangry. So, this time, I am sharing my quick eggless pancake that will keep you full until lunch time.

Cinnamon Eggless Pancake.

Serving : 5 pancakes
Time : 10 minutes prep 20 minutes cooking time
Ingredients
- 1 cup all purpose flour
- 2 tbsp sugar (you can skip this)
- 1 tbsp baking powder
- 1 tsp salt
- 1 tbsp of coconut oil
- 1 cup of milk
- 1 tsp of cinnamon powder
HOW TO MAKE
- Mix the dry ingredients into a bowl.
Make a little crater in the middle
Add milk and the oil inside the mixture
- Don't forget the cinnamon!
Next we gonna fry the pancake. It depends on how big you want it to be but I like mine big.
I use these butter that I wrapped like a candy
- Pick one of those butter candies and there ya go!

Now as for the coffee...
Home blend in this case is about mixing two different coffee. But there's also this term, house blend that means as reliable and straightforward – a blend that is a “go-to” in a coffee shop. They are generally seen as a consistent and high-value product that you can count on.. As the website also said, it's uniqueness lays in the roaster. They also give tips that For House Blend coffee, it has been said to taste best when it has been brewed through a Chemex machine.. I think if you have high quality beans and a decent roaster, you can make your own house blends or amazing breakfast blends.
I mixed Sumatra Arabica which has earthy flavor and low acidity with Toraja Arabica which also has low acidity but with dark cocoa and caramel hints. I think having the same characteristic makes this blend more creamy, crisp, and smooth. The dark cocoa flavor was soften with Sumatra Arabica.The aftertaste is quite nice and bold. I think that this blend is really nice if you want to have a great cup of joe that powers you up without the jittery.
The ratio of my blend was 2:2 which means, 2 teaspoon of Sumatra Arabica with 2 teaspoon of Toraja Arabica.
The result from this mixture is dark coffee that is unlike when I only make one variant. So, if you like darker coffee, this is it; the perfect blend.
I also like to blend Arabica with Robusta but I think the flavor and the effect isn't as bold as this one.
Pairing the coffee with this eggless breakfast was godly. I was really craving for a pancake but I found no eggs. I hate it when there is a single ingredients missing. I am sure at some point you've felt it too. Oh yeah, I choose pancake because I find that I can't eat rice anymore.
The people in my house has rice as their breakfast meanwhile, lately I found out that is the cause of my lethargy and low energy. So, it's why I have been cutting down rice and only eat it once a week. But sometimes, there are days when I am too lazy to cook and ended up having rice as breakfast. When I first arrived at home, my mom has always been cooking the breakfast. I always eat it out of respect because she puts in an effort. However, rice all the time makes me feel inflamed. Now, almost 4 months home, she finally understood and see the difference when I don't eat rice. So, these days whenever she tries to make me breakfast, she avoids rice and just gives some steamed sweet potatoes for the carb and add some sausages or egg.
Finally, since this is Sunday, I am doing meal-planning and this will go into my daily breakfast ideas because they are so easy,quick, and filling.
