Happy start to the week to all the foodies in the Hive community! Today I want to share another easy and delicious chicken and rice lunch idea with you.

This time, I wanted to make rice very similar to Peruvian chicken and rice. It's not exactly the same recipe, but I wanted to give it a similar touch.

This rice has a lot of flavor and texture, and if you love cilantro, you'll love this version.

Esta vez quise preparar el arroz muy parecido al arroz con pollo peruano, no es exactamente la misma receta pero quise darle un toque parecido.

Este arroz tiene mucho sabor, muchas texturas y si eres amante del cilantro esta versión te va a encantar.

Ingredients:

For the rice:

1 cup of rice

1 carrot

1/2 cup of corn kernels

1/2 white onion

1 clove of garlic

1/2 cup fresh cilantro leaves

1 tablespoon soy sauce

1 tablespoon paprika powder

1 tablespoon garlic powder

1 tablespoon onion powder

1/2 teaspoon cumin powder

Salt and pepper to taste

For the chicken:

1 chicken breast, cut into two portions

1 tablespoon soy sauce

Seasonings of your choice (in this case, garlic powder, pepper, oregano, pepper, and salt to taste)

1 tablespoon olive oil

So while it is draining, blend all the ingredients that will flavor the rice. Put half the onion, the garlic clove, and the cilantro leaves in the blender and blend them into a green liquid.

Luego continuamos con el arroz, a mí me gusta enjuagarlo siempre antes de cocinarlo para sacarle la mayor cantidad de almidón, suelo ponerlo en un colador debajo del lavaplatos para que se enjuague lo suficiente.

Then we cut the carrot into small cubes and put everything in the pot: the rice, the necessary amount of green water (for each cup of rice, two cups of water), then the chopped carrot, the corn, and then the rest of the seasonings: paprika, garlic and onion powder, soy sauce, and cumin. Don't forget a pinch of salt.

Stir gently with a spoon to mix everything together and cook the rice as usual.

Luego cortamos la zanahoria en cuadritos pequeños y llevamos todo a la olla, el arroz, cantidad necesaria de agua verde (por cada taza de arroz, dos de agua), luego la zanahoria picada, el maíz y luego el resto de condimentos: paprika, ajo y cebolla en polvo, salsa de soya y el comino, no te olvides del toque de sal.

While this is happening, heat a tablespoon of olive oil or any vegetable oil in a griddle or frying pan and cook the chicken breasts over medium heat.

When everything is ready, just plate it up and enjoy this delicious and colorful lunch.
