He tenido la oportunidad de ver cómo han evolucionado las costumbres alimenticias desde mediados del siglo veinte cuando nací.
Durante mi infancia y buena parte de la adolescencia solo conocí en mi casa productos naturales, verduras, hortalizas, frutas, carnes, pollo, pescado, mantequilla. No consumíamos productos procesados como jamones, salchichas, ni ningún embutido producido industrialmente. Sin embargo, mi madre tenía algunos hábitos poco saludables, como abusar de las frituras y del azúcar para endulzar los jugos de frutas y el café, también consumíamos muchos dulces hechos en casa.
Aunque les parezca extraño no logro recordar que consumiéramos ni un solo producto que viniera en algún envase o bolsa plástica. Las carnes, pollos y pescado los despachaban en trozos de papel grueso. Las verduras, hortalizas y frutas se echaban en bolsas de fique, tejidas a partir de una fibra natural, que cada persona llevaba para las compras. El pan lo despachaban en bolsas de papel. La capacidad de contaminación de aquellos envases era mínima.
Más adelante al final de la adolescencia, cuando ya iniciaba mis estudios universitarios a comienzos de los setenta, conocí los perros calientes y las hamburguesas, eran productos un poco exóticos y que consumía en la calle, porque en mi casa materna los perros calientes eran unos desconocidos.
Ese hábito de comer productos naturales lo he mantenido durante buena parte de mi vida. Cuando nacieron mis hijos me cuidé de enseñarles a comer esos productos. En mi casa nunca hubo bebidas gaseosas ni dulces procesados. A los niños se les daban los llamados dulces criollos hechos principalmente a partir de frutas y en ocasiones de leche.
Ya cuando los muchachos comenzaron el liceo se había popularizado mucho el consumo de perros calientes y hamburguesas, y cuando ellos invitaban compañeros de estudio a la casa siempre nos pedían a su madre y a mí que les hiciéramos esas comidas para merendar, acompañadas con alguna gaseosa. Esos “gustos” se los dábamos ocasionalmente, de manera que no se constituyeran en un hábito. Más adelante cuando ellos fueron adultos han incorporado otras costumbres a su forma de comer.
Sobre el tema de los alimentos, de la cantidad, y de lo que debemos consumir cada día es difícil lograr consenso. En nuestro tiempo de abundante información todos los días se habla de la presencia de “súper alimentos”, abalados por diferentes investigaciones científicas. Sin embargo, cada investigación a veces es rebatida por otra, lo que genera confusión entre los consumidores. Si hay consenso en que los alimentos procesados, envasados para durar largo tiempo en los almacenes, no son los más recomendables para el consumo habitual, porque en ellos se utilizan sustancias como colorantes y conservantes artificiales que pueden ser nocivos para la salud.
Llevo muchos años orientando mi alimentación de acuerdo a dos principios fundamentales. Uno viene de un pensamiento del sabio Hipócrates, el llamado padre de la medicina: “que tu alimento sea tu medicina, y el alimento tu medicina”. El otro, viene del pensamiento Oriental, consumir aquello que le sea más fácil procesar al cuerpo.
Con el paso del tiempo nuestro organismo va sufriendo un proceso de desgaste, eso por supuesto que afecta a los órganos que tienen que ver con la digestión como lo son el hígado, el páncreas, el estómago, el intestino; ya no se generan la misma cantidad de encimas necesarias para contribuir con los procesos digestivos. Si de jovenes nuestro cuerpo podía procesar un alimento con facilidad ya de mayores eso puede que no se de así.
Por sentido común he asumido la convicción de que debo ponérsela fácil al cuerpo, darle los alimentos que le sean fáciles de digerir. Otro asunto a tomar en cuenta es el tipo de actividad que tenemos. En mi caso la mayor parte de mi actividad es intelectual, por lo que paso muchas horas sentado escribiendo o leyendo. Así que no necesito consumir grandes cantidades de alimentos. Distinto fuera si trabajara cargando grandes pesos o fuese vendedor a domicilio, donde pasaría todo el tiempo caminando. En esos casos debería consumir mayor cantidad de alimentos para reponer un gasto de energía más grande.
MI dieta actual es muy sencilla, consumo básicamente verduras, hortalizas, legumbres y frutas; cereales como el arroz integral y la avena, y semillas como el ajonjolí y la linaza. En los almuerzos siempre consumo un poco de pescado o de pollo, hace mucho tiempo que me olvidé de las carnes rojas y los embutidos. Con esa alimentación siento que mi cuerpo funciona bien, que tiene la energía necesaria para sostenerme con la actividad que hago.
Creo que cada cuerpo es diferente, a unos le caen bien unos alimentos y a otros no, y en función de eso debemos establecer nuestras costumbres alimenticias. En lo posible recomiendo tratar de consumir aquellas cosas que nos sientan bien.
Dos ejemplos de que en este tema de la alimentación no hay reglas infalibles son mis padres. El viejo murió a los ochenta y nueve años y siempre comió de todo, incluyendo muchas cosas que se suponen eran nocivas; le encantaban las frituras y las tortas, pero a su cuerpo no le hacían daño, nunca sufrió de problemas de artritis, diabetes o hipertensión. Mi madre igual, tiene ochenta y seis años y goza de muy buena salud, también le encantan las tortas, los helados y el chocolate, tampoco tiene problemas con el azúcar, y su estómago es capaz de digerir hasta piedras.
Como señalé arriba cada cuerpo es diferente y si le prestamos atención podemos darnos cuenta de cuáles alimentos nos benefician y cuáles nos hacen daño. Luego es cuestión de tomar la decisión de quedarnos solo con aquello que nos haga bien.

However, my mother had some unhealthy habits, such as abusing fried foods and sugar to sweeten fruit juices and coffee, we also consumed a lot of homemade sweets.
Although it may seem strange to you, I can't remember that we consumed a single product that came in a plastic bag or container. Meat, chicken and fish were delivered in thick pieces of paper. Vegetables and fruits were put in fique bags, woven from a natural fiber, which each person carried for shopping. Bread was delivered in paper bags. The contamination capacity of those containers was minimal.
Later, at the end of my adolescence, when I started my university studies at the beginning of the seventies, I got to know hot dogs and hamburgers; they were somewhat exotic products that I consumed in the street, because in my mother's house hot dogs were unknown.
I have kept that habit of eating natural products for most of my life. When my children were born, I was careful to teach them to eat those products. In my house there were never sodas or processed sweets. The children were given the so-called criollo sweets made mainly from fruits and sometimes milk.
By the time the boys started high school, the consumption of hot dogs and hamburgers had become very popular, and when they invited classmates to the house, they always asked their mother and me to make them those meals for snacks, accompanied with a soft drink. These "treats" were given to them occasionally, so that they did not become a habit. Later on, when they became adults, they incorporated other eating habits.
It is difficult to reach a consensus on the subject of food, quantity, and what we should eat every day. In our time of abundant information, there is daily talk about the presence of "superfoods", supported by different scientific research. However, each research is sometimes refuted by another, which generates confusion among consumers. There is a consensus that processed foods, packaged to last a long time in stores, are not the most recommended for regular consumption, because they use substances such as artificial colorings and preservatives that can be harmful to health.
For many years I have been orienting my diet according to two fundamental principles. One comes from a thought of the wise Hippocrates, the so-called father of medicine: "that your food be thy medicine, and food be thy medicine". The other comes from Eastern thought, to consume that which is easier for the body to process.
With the passage of time our organism suffers a process of wear and tear, which of course affects the organs involved in digestion such as the liver, pancreas, stomach and intestine; they no longer generate the same amount of enzymes necessary to contribute to the digestive processes. If when we were young our body could process a food easily, when we are older this may no longer be the case.
By common sense I have assumed the conviction that I must make it easy for the body, give it foods that are easy to digest. Another issue to take into account is the type of activity we have. In my case most of my activity is intellectual, so I spend many hours sitting, writing or reading. So I don't need to consume large amounts of food. It would be different if I worked carrying heavy loads or was a door-to-door salesman, where I would spend all my time walking. In those cases I would have to consume a larger amount of food to replenish a larger energy expenditure.
My current diet is very simple, I basically eat vegetables, legumes and fruits; cereals such as brown rice and oatmeal, and seeds such as sesame and flaxseed. At lunch I always eat a little fish or chicken, I have long since forgotten about red meat and sausages. With this diet I feel that my body works well, that it has the necessary energy to sustain me with the activity I do.
I believe that every body is different, some people like some foods and others don't, and based on that we should establish our eating habits. As much as possible I recommend trying to consume those things that are good for us.
Two examples of the fact that there are no infallible rules when it comes to food are my parents. The old man died at the age of eighty-nine and always ate everything, including many things that were supposed to be harmful; he loved fried foods and cakes, but they did not harm his body, he never suffered from arthritis, diabetes or hypertension. My mother is eighty-six years old and in very good health, she also loves cakes, ice cream and chocolate, she also has no problems with sugar, and her stomach is able to digest even stones.
As I pointed out above, each body is different and if we pay attention we can realize which foods benefit us and which ones harm us. Then it is a matter of making the decision to stick to what is good for us.
