A few months back in late July, I tried an experiment. We were picking up many under-ripe apples from the ground dropped from squirrels. I didn't know what to do with them.
Then I came up with an idea: I would make apple syrup!
I packed in as many small apples I could into a large jar.
Filled the remainder with granulated sugar. Then I let it sit in a cool dark place for three months. Here are the results after 90 days:
The sugar preserved the apples on the bottom, but the ones on the top turned brown. As the apples liquefied, it combined with the sugar to make an apple syrup. No water was added, so all the fluid is just apple juice and sugar.
The brown apples look rotten, but they weren't! They were full of sugar and were firm. Not exactly fresh, but not nasty at all.
There's still a solid mass of sugar at the bottom, but also a good amount of syrup!
I carefully removed the apples, poured out the syrup into a mason jar.
Interestingly, the syrup has a greenish color to it, just like I would expect for green apple syrup!
We sampled the syrup and it was extremely sweet - not surprising considering how much sugar was used.
The idea is to mix this syrup with carbonated water to make a sweet, naturally apple flavored soft drink. We haven't tried it yet, but we're going to give it a go soon!
It was a fun experiment and it used a material that would have otherwise been wasted. All those under-ripe apples are put to a good use.
