Carrots.
One dish once frequently eaten during winters is "hutspot" a.k.a carrots and onions.
The winter carrots we're cut into small pieces and the same amount of cut onions was added to it. After it was soft it was mashed with potatoes. Small pieces of bacon and smoked sausage from the province Gelderland was added to it.
Once the food was on your plate in a heap you dug a hole in the middle and gravy was poured into it. The small pieces of sausage were the ducks swimming in the pool. As a child, I loved to eat it. Some salt was added with some pepper.
I can not remember the last time I ate it.
My children are not find onions and do not like carrots either. It's not that they won't eat it but the work isn't worth the trouble. The price of carrots increased which doesn't make it interesting enough for me to buy either. I have a hard time digesting carrots and the children like them raw too.
An easier dish is to cut carrots and onions into pieces and cook it some water with stock (vegetable) cubes. You can add meat to it of little meatballs and eat it with potatoes. It was a recipe I read as a teenager in a German cooking book. At that time I made it frequently. These days I no longer buy carrots and I avoid it if they sell it in pieces with salad. Who knows one day I eat it again.
