- Butter Chicken -
This was the last staff meal I cooked at my previous work place for everyone. What an ending to this chapter of a few hundred staff meals made. Been a great 14+ months of making meals in that kitchen and I'm gonna carry some good memories of my time there.
🇮🇳🏴🧈🍗 So for the last meal, I made Butter Chicken and man was it delicious! So creamy and packed full of flavor from all the spices and with a garam masala mix that I blended together.
It starts off with marinating the chicken with a blend of spices, garam masala, and some other ingredients together with yogurt then marinated overnight in the fridge.
Then in a pan a ginger garlic paste is cooked with butter (or you can use ghee instead) and sautéed until fragrant. Then a mix of tomato puree and cashew nut puree is added in and cooked with the chicken for 10 minutes.
🧈🥛🌿 Finally add in more ghee, cooking cream and fresh coriander and the butter chicken is done!
🍛 Serve it up with white rice or some naan bread and enjoy!

Chicken 2kg
Marinade:
Yogurt 400g
Ginger garlic paste 2 tbsp
Garam masala 2 tbsp
Chili powder 1-2 tbsp
Lemon Juice (half a lemon)
Fenugreek leaves 1 tbsp
Salt 1 tbsp
To cook:
Clarified butter (ghee) 2 tbsp
Ginger garlic paste 1 tbsp
Tomato puree 250g
Cashew paste 150g
Cooking cream 140g
Chicken Stock 1 tbsp
Salt to taste
