Even though you have never experienced what 'Fine Dinning' is, you may seem very unfamiliar with that word. I've seen a number of people's posts on social media, that fine dining is like having dinner at an expensive restaurant, with several steps such as appetizer, main course and dessert. I also saw that the food was decorated very attractively, not only enjoying the food but also visually enjoying the work on the table.
Fine dining is usually give a touch of luxury, in the form of premium cuts of meat and premium ingredients, the taste will really melt on the tongue, that's what makes it expensive. Not only that, usually fine dining is also in a strategic location, in the middle of the city with sparkling nights and on top of high-rise buildings, such as hotels or skyscrapers. With that experience, people who enjoy fine dining will also experience true 'luxury'.
Of course as a human, I also want to feel the same way. But alas, my wallet buy it at the moment, I hope one day I can experience real fine dining, with my loved ones. That's why, humans like money, because they can buy whatever they want. Money can't buy happiness, but almost all happiness comes from money. Who can enjoy poverty with joy?
Well, I want to create a small happiness for myself. Learn to try to know how fine dining is, maybe this is very much different from actual fine dining, with simple ingredients too. I thought, how to make fine dining with local Indonesian food. This is also one of the inspirations for someone posting on my social media, he makes pecals in a very luxurious style.
Armed with a simple green plate, I think I can make one too. Enough to meet daily protein, carbohydrates, fats and fiber. Yes, this time I will make the pecal with plant based. Get protein from tofu and tempeh, carbohydrates from palm sugar, fat from nuts. Peanut sauce is made from refined palm sugar, spices and peanuts, so it is quite filling and complete with macronutrients.
I use ready-to-eat pecal sauce, which I bought at the traditional market this morning. It's cheap, only 5000 rupiah, I don't have to make very complicated pecal sauce. Indeed, making pecal sauce is almost the same as making peanut butter, however, pecal sauce can be stored for a very long time and is practically brewed when needed. You only need to brew it with a little hot water, then you can pour the pecal sauce over the vegetables you like, just like the peanut butter you can enjoy on toast at breakfast.
Here I have tempeh and tofu which I will cut into cubes, then fry and drain from the cooking oil. After that, I waited for the tofu and tempe to cool down.
I took the cabbage that had been prepared, then I took the leaves of the cabbage, then washed and cleaned them. Oh yes, I use carrots as the second vegetable after cabbage. Carrots have just the right amount of sweetness, I think this is the perfect mix for making a new style of pecal.
Boil 1 liter of water that has been added with a little salt, so that the vegetables have a taste, not only sweet, there is also savory in it. I boiled the two vegetables for 3 minutes, then I put them in the ice water that had been prepared. After that, everything is drained from the water to dry.
Pecal sauce that I have prepared, don't forget to douse it with hot water. Just adjust the way you use it, because I'm afraid the consistency of the pecal sauce will be different if you don't use the measure.
Slowly I plated perfectly on the plate I had prepared, using a green plate so that everything looked perfect and clear. Should have used a black plate to make it fancier, but I don't have one.
Starting with pecal sauce that is carved well on a plate until the vegetables are covered with other vegetables, then transferred to a plate and washed down with pecal sauce. Don't forget to tell and tempeh so you can enjoy protein from this plant base. Rich in flavors that are integrated into a delicious meal. It's perfect to enjoy. Good luck!
