Hello vegan lovers, trust your week has started out well. I am getting into the week gradually myself. Yesterday I was craving something different from the rice I had at home, so I decided to see if I could scramble up some vegetables in my kitchen to make a salad. Thankfully I found that I had some vegetables enough to make a simple salad that I could munch on.
I am a big fan of vegetables and I enjoy having it in different forms be it as side dish or a whole meal. So yesterday I decided to have it during lunch time.
Here are the veggies I used
1 small cabbage
4 medium sized carrots
2 medium sized onions
1 medium sized cucumber
1 can of sweet corn
AND1 lemon for a tangy taste
Preparation
I washed the cabbage and chopped it
Scrape, wash and grate the carrots
Peel wash and chop the onions
Wash deseed and chop the cucumber
Take out the sweet corn, wash and combine all the prepared vegetables
I squeezed the washed and cut lemon to have that tangy taste and my salad was ready to eat.
