Hello vegan lovers, hope your day is going as planned. Mine is getting better by the hour as cooking a dish I really like seems to be helping me get out of my feelings. 💃🏽💃🏽 Today I made a vegetable sauce to be eaten with pasta or rice by my family. Here are the ingredients I used below
. 1 pack of spaghetti pasta
1 pack of penne pasta
. Vegetable oil
. I medium sized cabbage
. 4 carrot sticks
. 2 medium onion bulbs
. 2 bell peppers
. A handful of scotch bonnet peppers
. 1 pack of tomato paste
. All purpose seasoning(1/4 teaspoon)
. Garlic/ginger paste
. Salt to taste
Preparation
Boil the spaghetti or macaroni
Scrape, wash and chop the carrots in small cubes
Wash and chop the cabbage
Peel wash and chop the onions
Check the spaghetti if it is soft enough and take away from the heat to drain the water and it's ready
Blend the scotch bonnet with garlic and ginger and cut the bell peppers
Add some oil to the pot on fire and put in some thyme, onions and the tomato paste when it's hot.
Add the crushed peppers
Saute for 5 mins and put in half a tablespoon of salt, add the garlic, ginger and all purpose spice let it cook for another minute.
Add the carrots and leave to cook for 3 minutes
Put in the chopped cabbage and stir
Then add more onions and the bell peppers
Leave for a few seconds so they don't over cook and the sauce in ready
This was very delicious. You can pair it with rice or pasta
