Croquetas de soya y verduras crunch
Hello @plantpoweronhive friends. I am excited to participate in this community and for the second time, in one of your challenges. I have already gotten some great recipes from you. Today I am going to share with you the recipe and preparation of the dish I made for The Brand New PLANT BASED challenge: CRISPY YUMMINESS!. Which although it is vegan, it is not light at all. So for those of you who are on a low calorie diet, you can leave this preparation for that moment when you're going to be a little bit hungry.
I usually prepare some recipe with what I already have at home, that's why I decided for this dish. So without further ado, I'll start by sharing with you the ingredients.

Hoy les voy a compartir la receta y preparación del plato que hice para el The Brand New PLANT BASED challenge: CRISPY YUMMINESS!. Aunque es vegano, no es nada light. Así que para los que están en dieta baja en calorías, pueden dejar esta preparación para ese momento que se la van asaltar un poco.
Normalmente suelo preparar alguna receta con lo que ya tengo en casa, por eso me decidí por este platillo. Así que sin más, comienzo compartiendo con ustedes los ingredientes.
Ingredients🍶
| 200 grams of soy meat | 2 medium potatoes |
| ½ large onion, chopped | 2 medium sweet potatoes or yams |
| ½ chopped green pepper | ¼ medium pumpkin or squash |
| 3 garlic cloves | 1 teaspoon salt |
| ½ cup corn flour | 2 teaspoons paprika, spicy |
| 1 teaspoon salt | Oregano |
| 2 teaspoon hot paprika | 2 cups of oil |
| Oregano, chives and celery | |
| Enough hot water to hydrate the soy meat | |
| 2 cups oil of your choice |
Note: as you will notice I really like to use the spicy paprika, but you can choose the one you prefer.
I additionally used:

Nota: como notarás me gusta mucho usar la paprika picante, pero tu puedes elegir la que prefieras.
Adicionalmente utilicé:
• Mayonesa de Zanahoria. Puedes ver su preparación aquí.
• Ensalada de pepino y tomate. Puedes ver su preparación aquí.
Preparation of the soy croquettes | Preparación de las croquetas de soya 🍴
The first thing you should do, is to hydrate the soy meat with hot water. For this amount of meat you can use approximately 4 cups of water. Remember that the meat will double its volume. You must also let it stand for at least 10 minutes. Then you must strain it, re-hydrate it, drain it again and finally rinse it and squeeze it very well.
Lo primero que debes hacer, es hidratar la carne de soya con agua caliente. Para esta cantidad de carne puede utilizar aproximadamente 4 tazas de agua. Recuerda que la carne duplicará su volumen. Además debes dejarla reposar por al menos 10 minutos. Luego debes colarla, volver a hidratar, volver a escurrir y por último la enjuagas y exprimes muy bien.
While you let the soy meat rest, chop the onion, pepper, garlic, parsley and celery very well.
Mientras dejas reposar la carne de soya, pica muy bien la cebolla, el pimento, el ajo, el perejil y el celery.
Once the soy meat is ready, add the corn flour, finely chopped vegetables, salt, paprika and oregano.
Una vez lista la carne de soya, agrega la harina de maíz, los vegetales finamente picados, junto con la sal, la paprika y el orégano.
Knead very well until you obtain a compact and moldable dough.
Amasa muy bien hasta obtener una masa compacta y moldeable.
Form the croquettes as you prefer, you can make them with a spoon, by hand, I prefer to use cookie cutters so that they are all the same size. You can also use the figure molds if you want to spoil someone special.
Forma las croquetas como las prefieras, puedes hacerlas con una cuchara, con la mano, yo prefiero utilizar moldes de galletas para que todas me queden del mismo tamaño. Puedes utilizar también, los moldes de figuras si quieres consentir a alguien especial.
Once the croquettes are assembled, fry them in plenty of oil. I tried frying the croquettes once assembled and also, passing them through a mixture of corn flour, salt and paprika. In appearance there is almost no difference, but the second ones are crispier, but they also absorb more fat, so I leave this information for you to decide.
Una vez armadas la croquetas, fríelas en abundante aceite. Yo probé friendo las croquetas una vez armadas y también, pasándolas por una mezcla de harina de maíz, sal y paprika. En apariencias no hay casi diferencias, pero las segundas efectivamente quedan más crocantes, pro también absorben más grasa, así que les dejo estos datos para que ustedes decidan.
When you take out each croquette, place it on absorbent paper to remove excess fat.
Cuando saques cada croqueta, colócala sobre papel absorbente para eliminar el exceso de grasa.

Cut the potatoes, sweet potato and pumpkin into thick wedges.

Soak in ice water for 10 minutes. This is especially for potatoes but I take advantage and put them all in. Then drain on a clean cloth or absorbent paper.
Remojar en agua con hielo por 10 minutos. Esto es, especialmente para las papas pero yo aprovecho y las meto todas. Luego escurrir en un paño limpio o papel absorbente.
Season with salt, paprika, oregano or any other herbs you wish to use. Mix very well.

To fry the vegetables, do it in enough oil, you can use the same oil as the croquettes if you wish. But pay close attention to my advice. Fry the vegetables separately, because each one has a different consistency. Also use a large enough pan so that you can accommodate the wedges and their cooking is not affected. I had to use a very small pan for reasons beyond my control.
Para freír las verduras, hazlo en suficiente aceite, puede utilizar el mismo que las croquetas si lo deseas. Pero presta mucha atención a mis consejos. Fríe las verduras por separado, porque cada una tiene una consistencia diferente. También utilizar un sartén suficientemente grande para que puedas acomodar los gajos y no se vea afectada su cocción. Yo tuve que utilizar un sartén muy pequeño por razones ajenas a mi voluntad.
You are going to fry the potatoes and sweet potato in two batches. First you will fry over medium heat, for 4 minutes. Remove from the fire, rest on absorbent paper. Then turn up the heat and finish frying for about 3 minutes or until golden brown. This will give them a crunch that you will love. The sweet potato browns faster than the potato, so you must be very attentive.
Vas a freír las papa y el boniato en dos sesiones. Primero freiras a fuego medio, por 4 minutos. Retiras del fuego, reposas sobre papel absorbente. Luego sube la llama del fuego y termina de freír por unos 3 minutos o hasta que esté totalmente doradas. Esto les dará un crunch que te encantará. El boniato se dora más rápido que la papa, así que debes estar muy pendiente.
In the case of the squash. Fry them once on high heat for about 2 minutes. When removing them, place them on absorbent paper to remove excess fat.
En el caso de la calabaza. Las fríes una sola vez en fuego alto por aproximadamente 2 minutos. Al sacarlas colócalas en un papel absorbente para eliminar el exceso de grasa.
Now all you have to do is serve. I used carrot mayonnaise and cucumber and tomato salad as an accompaniment and decoration.
Ahora no te queda más que servir. Yo utilice como acompañamiento y decoración la mayonesa de zanahoria y la ensalada de pepino con tomate.
