Happy start to the week everyone! I hope you're all doing well and that this week is a success in all your endeavors. Today I'm sharing my entry for the weekly contest offered by the @Qurator team, Qurator's: Hive Top Chef! | Crispy. This week, the dish to be presented had to be crispy. I love crunchy dishes, haha, really crispy. For my entry, I decided to prepare some delicious crispy eggplants with tomato, garlic, and ginger sauce. I really like eggplants in red sauce, and these crispy eggplants, combined with this sauce, are a delight. The flavor is incredible. Let's take it step by step.
Delicious Eggplants Crispy.

Ingredients:

2 eggplants.
120 g of wheat flour.
125 ml of water.
Salt, to taste, for the sauce and for the eggplants.
Breadcrumbs.
Olive oil, or any other vegetable oil you have at home.
2 tomatoes.
Half an onion.
2 garlic cloves.
A small piece of ginger.
1/2 teaspoon of oregano.
Preparation:
1- Wash the eggplants thoroughly, remove the skin, then cut them into slices. Place them in a colander and add salt to release the bitterness. Let them cook for approximately 15 minutes.



2- For the tomato sauce, start by dicing the onion, crushing the garlic, and finely dice the ginger, or you can also grate it. In a preheated pan, add the garlic and ginger to sauté, then add the onion. When everything is well sautéed, add the diced tomato, add a little salt, oregano, and a touch of sugar, cover and let it cook until the sauce forms.




3- Mix the water and flour in a bowl, with a little salt. In another bowl, add the breadcrumbs. Dry the eggplants with a paper towel and coat them first in the water and flour mixture, then in the breadcrumbs. Fry them in plenty of oil on both sides until golden brown. well golden.


4- When they're golden brown, remove them from the oil and place them on a paper towel. Let them rest for a few minutes, then serve with the red sauce. This sauce is delicious. The ginger gives it a spicy touch, and with these crispy eggplants, the flavor is exquisite.
