White Rice Serve With Soupy-Beans
Greetings to you all dear vegans in the community. Each time I want to share with you guys a bit of my cooking sessions, but I often don't have the motivation to make a move, irrespective of the fact that I have learned and enjoyed other vegan's post here. But today, I muster up the courage to do so, please enjoy and drop your comments.
As we all know, rice and beans is the common staple in diet of many culture around the world and it is prepared in different ways. That underscore the fact that variety is the spice of life. So today, I will be sharing one of the numerous way I enjoy cooking my rice and beans. I am using the Soupy-Beans method.
Ingredients is as follows:
- Rice - You determine the quantity by your family size
- Beans - Quality same as above
- Palm oil
- Crayfish
- Fish
- Maggie - Your favorite
- Onion
- Salt
- Curry leaf
- Chaya or tree spinach (popularly call "hospital too far")
- Pepper
Preparation And Cooking
I start with washing and per boiling my rice before cooking it to soft with a bit of salt to taste.
Then wash and cook my beans to soft.
While the beans is being cooked, I prepare other ingredients.
Wash and shred the fish
Wash the Cnidoscolus aconitifolius or tree spinach commonly known as hospital-too-far in our local parlance due to its fast blood building ability.
Also wash and shredded alongside the tree spinach is the curry leaf. This will add the much needed flavor.
Wash and slice the onion to my disire quantity and shapes. This of course will be use for frying. It has its own medicinal properties.
Then I add the shred tree spinach together with the curry leaf, pepper and crayfish into the mortar and pound to satisfaction with the pestle.
With all ingredients fully prepared and set, I then shift out my cooked to soft beans into another bowl.
Then I placed the empty pot on the hot plateplate/burner and allow it to dry off the water. Then I pour in the red oil, allow it to heat to a degree before adding salt and onions to fry. Pour in the pounded tree spinach and pepper along with the crayfish and steer it for some seconds before pouring in the beans. Then add the spice - Maggie to it, add a bit of water to balance the equation. By now the aroma is everywhere and the next neighbor is cheering me up 🤽. (Sorry, I couldn't take the shot here as my hands were busy)
Finally, it time to serve the dish and confirm the percentages of delicious sweetness.
Fortunately, @umoh100 who came to receive some tutorial on how to create quality post, was with me, so we both balance on the floor and descended heavily on the rice and soupy-beans, and make sure that we do justice to it.
