Locally known as "Ambarella" or "June Plum", ambarella is a beloved tropical fruit in Sri Lankan kitchens due to its uniquely sharp flavor and versatility in culinary uses. Often enjoyed fresh or pickled as a relish, one of the most delightful ways to experience this fruit is by transforming it into a delicious curry. The natural tartness of ambarella blends beautifully with coconut milk and a balanced mix of spices, creating a refreshing and nutritious dish that’s simply mouthwatering. This curry is not just a tribute to traditional village flavors, but also a celebration of the rich culinary heritage of the island.
So, let’s see step by step how to prepare this flavorful dish!
Materials Used.
Ambarella 250g.
Salt to taste.
A finely chopped onion.
3 Chopped green chilli pods.
Curry leaves.
3 crushed anise and cloves.
2 cinnamon sticks.
1/2 Teaspoon of turmeric powder.
3 Tablespoon of coconut oil.
3 Teaspoon of chili powder.
1 1/23 Teaspoon of curry powder.
Some water.
1 Teaspoon of Fenugreek seed.
1 Teaspoon of mustard seed.
2 teaspoon of sugar.
The cooking process as follows.
First, remove the skins of the ambarella fruits, then cut them into medium-sized pieces as shown below, and wash them thoroughly.
Next, place the ambarella pieces in a cooking pot, add a little salt and turmeric powder, pour in some water, and cook it well on the stove.
Then, take another pan and add about 3 tablespoons of coconut oil. Add fenugreek seeds, mustard seeds, crushed garlic, dried red chilies, curry leaves, and cinnamon. Sauté until aromatic.
Next, add chili powder, curry powder, a little sugar, and salt to taste. Sauté everything together for a short moment.
Now, add water as needed and then add the sautéed ambarella pieces. Cook for about 5 minutes.
