Thumba Karavila, also known locally as Spiny Gourd, is a small but delicious and medicinal vegetable that is often overlooked in modern kitchens. However, when prepared simply with the right blend of spices, it becomes a nutritious and surprisingly satisfying dish. In traditional Sri Lankan medicine, this vegetable is considered a natural remedy for various illnesses. Today, I’m excited to share with you a quick and easy recipe for making a flavorful Spiny Gourd stir-fry that pairs perfectly with rice.
Materials Used.
Spiny Gourd 200g.
A finely chopped onion.
3 cloves of garlic, finely chopped.
2 green chilies, chopped.
A sliced tomato.
Some Curry leaves.
1 Teaspoon of curry powder.
1/2 Teaspoon of pepper powder.
1 Teaspoon of chili powder.
2 Tablespoons of coconut oil.
1/2 Teaspoon of turmeric powder.
Salt as needed.
The cooking process as follows.
Now let's get ready to prepare this. First, we wash and clean the green Spiny Gourd and cut them into round shapes.
Now let's take a pan and place it on the stove. Add about two tablespoons of coconut oil. Once the oil is heated, add chopped garlic, onions, curry leaves, green chilies, and tomatoes, and sauté for a short while.
Now add chili powder, turmeric powder, curry powder, black pepper powder, and salt to the same mixture and combine everything well.
Next, add the chopped spiny gourd pieces and sauté them on low heat until they are cooked. Once done, remove from the heat.
