Whether you're looking for a plant-based delight or simply a nutritious addition to your rice or bread, this curry delivers the soulful taste of homemade goodness. Let's see how to prepare it .
Ingredients...
⭐️ Beans 200G.
⭐️ Cashews 50g.
⭐️ 1/4 Cup of coconut milk.
⭐️ Curry leaves.
⭐️ A finely chopped onion.
⭐️ 2 cloves garlic, finely chopped
⭐️ 1/2 Teaspoon of Chili powder.
⭐️ 1/2 Teaspoon of turmeric powder.
⭐️ 1/2 Teaspoon of mustard powder.
⭐️ 1/2 Teaspoon of curry powder.
⭐️ 1/2 teaspoon of Fenugreek seed.
⭐️ Salt as needed.
⭐️ 2 Tablespoon of coconut oil.
The cooking process as follows.
First, wash and clean the beans thoroughly, then break them into small pieces. At the same time, finely chop the onions and garlic.
Next, add the broken pieces of beans into a bowl and mix in chili powder, turmeric powder, curry powder, fenugreek seeds, mustard powder, and salt. Mix everything well and set it aside.
Next, take a cooking pan and place it on the stove. Add about two tablespoons of coconut oil. Once it heats up, add chopped garlic, onions, and curry leaves and let them sauté. Then, add the cashews and mix it.
Next, add the spiced beans mixture into the pan. At the same time, add some coconut milk and mix everything well. Cook it just enough to retain the green color of the beans, then remove it from the heat.
Once prepared, this curry becomes a celebration of flavor – creamy, delicately spiced, and aromatic. Each bite brings out the earthy richness of the beans and the buttery softness of the cashews, capturing the essence of wholesome Sri Lankan home cooking. Served warm with a plate of steamed rice, it surely brings a smile, nourishing both body and soul. I should also mention that you can use cashews in any condition. I used raw cashews that had softened slightly because they had been stored for a while. Give it a try yourself!
