I have a banana that is quite ripe in my refrigerator. I have stored this banana for 1 week because I no longer have time to consume it. In that 1 week the appearance of the banana is no longer beautiful and black as I shared in this photo. However, this banana is still good so I will process this banana into a Banana cake with a little chocolate mixture. And in this recipe there is no need for sugar because the banana is already very sweet.
The ingredients I use to make this banana cake are:
1. 1 bunch of bananas (the type of banana depends on where you live.
2. 150 grams of rice flour
3. 100 ML of thick coconut milk that I got from 65 ML of instant coconut milk and I added water until it became 100 ML
4. 50 grams of chocolate bars.
5. ½ teaspoon of salt
And let's make this chocolate banana cake together:
1. The first thing I do is peel the banana and then I put it in a large container. And see the banana is not rotten, right friends. This is because it is in the refrigerator and a little too ripe so that the skin turns black.
2. After I peel it, I mash it using only a spoon because the texture of the banana is already soft.
3. After the banana is soft, I add rice flour
4. And after that I grate the chocolate bar. The purpose of grating the chocolate bar is because I want to give a trick to the eyes. When the cake is cooked, the chocolate will look like the banana fibers naturally even though it is chocolate and after eating it will be known that the banana has a chocolate taste in it. However, when I grated it, I left a little chocolate to be placed on top of the dough later when it was half cooked.
5. After that I put in salt then I put in thick coconut milk into it
6. and all the existing ingredients I smoothed so that there was no flour that clumped, and of course I also checked the thickness as seen in the picture.
7. After that I poured it into the mold then steamed it over medium heat for about 30 minutes. But after the 20th minute. I cooked the remaining chocolate that was there until it looked like in the picture. Then I steamed it again until cooked.
8. After it was cooked then I lifted it and let it cool first before I removed it from the mold,
And see the result is perfectly cooked, soft without having to use softener and of course free from gluten and cholesterol.
