This is my first post in this community and it caught my attention that the content is only for vegan food, the truth is that I like to eat healthy and I found very interesting all the recipes that are published here.

This time I want to share with you a recipe that I learned a few years ago, when my country Venezuela went through one of its worst crises and it was very difficult to buy food. There was no food and to buy something, you had to get up early and stand in long lines, I hope this will never happen again.

We eat corn flour arepas and one way to make it was by adding vegetables such as zucchini, pumpkin, yucca, okra and carrots.

Today I share with you this simple recipe to prepare arepas with zucchini and carrots, ideal for a healthy breakfast or dinner.

Ingredients

• 1 cup corn flour
• 1 medium zucchini
• 1 small carrot
• Salt to taste
• 1/4 cup of water
• With these ingredients you get 6 medium arepas.

Preparation

• The first step is to wash the vegetables very well and to proceed to grate them. The zucchini is grated with its peel and the carrot must be peeled before grating it. The carrot is optional and is used to increase the amount of fiber and color to the arepa.

• Add salt to taste and then add the flour and water to form a soft and manageable dough with the hands.

• Give the arepa a rounded shape and take it to the griddle or budare until a shell is formed on both sides. It is advisable to make them thin so that they do not take so long to cook.

• Arepas are served hot and can be filled with whatever you like. A tomato, avocado and onion salad is ideal to accompany them.

Deliciosas arepas con calabacin y zanahoria

Es mi primera publicación en esta comunidad y me llamó la atención que el contenido sea solo para comida vegana, la verdad me gusta comer sano y me pareció muy interesante todas las recetas que aqui se publican.

En esta oportunidad quiero compartirles una receta que aprendí hace unos años, cuando mi pais Venezuela atravesó una de sus peores crisis y era muy difícil adquirir alimentos. No había comida y para comprar algo, había que madrugar y hacer largas filas, espero que esto jamás vuelva a repetirse.

Nosotros comemos arepas de harina de maiz y una forma de rendirla era agregándole vegetales tales como el calabacin, la calabaza o auyama, la yuca, el ocumo y la zanahoria.

Hoy les comparto esta sencilla receta para preparar unas arepas con calabacin y zanahoria, ideales para un desayuno o una cena sana.

Ingredientes

• 1 Taza de harina de maiz
• 1 calabacín mediano
• 1 Zanahoria pequeña
• Sal al gusto
• 1/4 Taza de agua
• Con estos ingredientes obtienes 6 arepas medianas

Preparación

• El primer paso es lavar muy bien las verduras y proceder a rayarlas. El calabacin se raya con su cáscara y la zanahoria hay que pelarla antes de rayarla. La zanahoria es opcional y se usa para aumentar la cantidad de fibra y colorido a la arepa.

• Colocar sal al gusto y luego agregar la harina y el agua hasta formar una masa suave y manejable con las manos.

• Darle forma redondeada a la arepa y llevar a la plancha o budare hasta que se les forme una concha por ambos lados. Es recomendable hacerlas delgadas para que no tarden tanto en cocinarse.

• Se sirven las arepas calientes y se pueden rellenar con lo que desee. Una ensalada de tomate, aguacate y cebolla es ideal para acompañarlas.
