Ripe or even half-ripe mangoes are not just for side dishes—they can truly take center stage as the heart of a flavorful curry. That’s exactly what I prepared today! In traditional Sri Lankan cooking, mango curry is a delightful blend of sweet, sour, and spicy notes that awaken the senses and add variety to any rice and curry meal. Whether you use green mangoes for their tangy bite or ripe mangoes for a softer sweetness, this dish has been loved across generations for its unique flavor and simple preparation. So, how do we make it? Let me show you.
Materials Used.
3 medium-sized mangoes.
A few finely chopped onions.
Curry leaves.
3 Chopped green chilli pods.
3 cinnamon sticks.
3 cloves of chopped garlic.
2 to 3 pieces of pandan.
2 Tablespoon of coconut oil.
1/2 Teaspoon of turmeric powder.
1/2 Teaspoon of pepper powder.
Salt to taste.
2 Tablespoon of sugar.
3 Teaspoon of curry powder.
1 1/2 Teaspoon of chilli powder.
Some water.
The cooking process as follows.
Now let’s get ready to prepare this dish. First, cut the mangoes into fairly large pieces as shown below, wash them thoroughly, and set them aside.
Next, take a pan and place it on the stove. Add about two tablespoons of coconut oil and allow it to heat. Once the oil is hot, add chopped garlic, salt, pandan leaves, curry leaves, and cinnamon. Mix well and sauté until slightly browned.
Next, add chili powder, curry powder, turmeric powder, black pepper powder, and salt. Mix everything well.
Now add the mango pieces to it, pour in more than a cup of water, and cook for about 6 minutes.
Then add one or two tablespoons of sugar, mix well, and cook for another 2–3 minutes before removing from the heat.
So, in this way, once the dish has thickened and the mango pieces have absorbed all the rich flavors, it is ready to be enjoyed with rice, string hoppers, roti, or bread.
