When simple ingredients are combined with a touch of creativity, even a humble roti can be transformed into something truly delicious. The sweet potato-stuffed roti is a perfect example of this – a soft wheat dough filled with a mildly sweet, spiced sweet potato mixture creates a heartwarming and nutritious meal. Whether it's for breakfast, lunch, or a light evening snack, this roti brings both flavor and nourishment to your plate.

Materials Used.
Wheat flour 150g.
Salt as needed.
3 Tablespoon of coconut oil.
Low heat. A little water.
200g boiled and mashed sweet potatoes.
Curry leaves.
1/2 Teaspoon of Mustard Seeds.
2 cloves of garlic, finely chopped.
A finely chopped onion.
A few chopped leek leaves.
2 green chilies, chopped
1 Teaspoon of chili powder.
The cooking process as follows.
Let’s begin the preparation. First, take a bowl and add some wheat flour to it. Then add a tablespoon of coconut oil and a pinch of salt. Gradually add lukewarm water while mixing, and knead it into a soft dough. Once the dough is ready, apply a little oil over it and set it aside to rest.
Next, take a cooking pan and place it on the stove. Add about one tablespoon of coconut oil. Once it heats up and becomes slightly hot, add mustard seeds, chopped garlic, curry leaves, green chilies, crushed dried chilies, and salt as needed. Mix them well and sauté the mixture until slightly fried and aromatic.
Now take the prepared dough and divide it into small portions. Take one portion at a time and flatten it out into a roti shape. Place a spoonful of the prepared sweet potato filling in the center as needed, and fold or shape the roti as shown below (or in your desired way).
Finally, take a pan and place it on the stove. Let it heat well and lightly grease it with a bit of oil. Place the prepared rotis on the pan and cook both sides until golden brown. Once fried to a beautiful golden color, remove them from the heat.
Golden and crispy on the outside, and warmly filled on the inside, these stuffed sweet potato rotis are a comforting bundle that satisfies both hunger and heart. Serve them warm with a cup of tea or some fresh chutney, and enjoy the perfect balance of taste and nutrition in every bite.
