Good evening to all my dear HIVE friends. Today, I'm here to share with you a truly unique kind of snack. There's something special about transforming simple vegetables into irresistible short eats โ and with carrots, corn flour, and the natural sweetness of this recipe is perfect for just that.
These delightful carrot bites are easy to prepare and ideal for tea time, lunchboxes, or even as a quick evening snack. Using everyday ingredients, they bring both taste and nutrition to your plate โ making it a treat that both kids and adults can enjoy alike.
Ingredients...
๐ A medium sized carrot or two.
๐ Curry leaves.
๐ 1/2 teaspoon of Pepper powder.
๐ Salt as needed.
๐ 1/2 cup of Corn flour .
๐ Coconut oil for frying
The cooking process as follows.
First, thinly slice the carrots into round pieces. At the same time, finely chop a few curry leaves.
Next, steam the carrot slices well, remove any excess water, and finely mash them.
Next, add rice flour, salt, pepper powder, and finely chopped curry leaves to the mashed carrots and mix into a dough.
Then, take small portions of the dough and shape them into your preferred form. I shaped mine like this, but feel free to get creative with your designs!
Finally, heat some coconut oil in a pan. Once the oil is hot, gently place the shaped snacks into the pan and fry until theyโre golden and crispy. Let them rest on a paper towel to drain any excess oil, then serve warm and enjoy!
So, preparing this is very easy. Also, if you're not a fan of oil-fried snacks, you can bake them instead. Once perfectly fried or baked, these golden carrot bites offer a delightful texture and a pleasing blend of mild spices.
Serve them warm with a cup of tea or a homemade smoothie, and enjoy the comfort of home-cooked goodness. For a lighter option, place them on paper towels after frying to absorb excess oil before serving.
Be warned thoughโonce served, they may disappear in just a few minutes! Their crispy, golden finish makes them an irresistible snack any time of day.
